  • Mango is a tropical fruit with an oval shape and green or yellow skin with a red blush. The flesh is golden in color surrounding a flat, hard pit. Unripe mango is crunchy and tart and is often used in salads. Ripe mango is sweet and creamy with a texture similar to peach. Mango is available year-round.

Selection
  • The unripe mango is firm with green skin and no signs of shriveling, soft spots, or discoloration.
  • Ripe mango gives slightly when lightly squeezed and has a fruity aroma near the stem end. No signs of overly soft spots and shriveling.
Storage
  • Green mango should be stored at 50°F - 55°F (10°C - 13°C) with a relative humidity of eighty-five to ninety percent and no mist. A ripe mango should be stored at 45°F - 46°F (7°C - 8°C) instead.
  • The typical shelf life is fourteen to twenty-eight days depending on the variety.
  • Mango is sensitive to ethylene, a naturally occurring gas that regulates ripening. Mango should not be stored with high ethylene-producing products to avoid poor flavor development and premature softening. Mango produces a moderate amount of ethylene.
  • Mango is sensitive to chilling injury at storage under 50°F (10°C). Symptoms include skin discoloration, pitting, uneven ripening, and poor flavor development. As the fruit ripens, its tolerance to chilling injury increases.
