  • Green squash is a softshell summer squash with a cylindrical shape, thin, dark green skin, and some light speckling. Green squash is generally harvested when it reached six to eight inches in length. The flesh is firm, white, and mild-tasting. Green squash is completely edible both raw and cooked. Common application includes sautéing, roasting, and baking. Green squash is available year-round.

Storage
  • Green squash should be stored at 41°F - 50°F (5°C - 10°C) with a relative humidity of ninety-five percent and a light mist.
  • The typical shelf life is no more than two weeks. Long-term storage leads to dull rind, dried or discolored stem end.
  • Green squash is sensitive to ethylene, a naturally occurring gas that regulates ripening. Green squash should not be stored with high ethylene-producing products to extend shelf life and avoid yellowing. Green squash produces a low level of ethylene. Ethylene production increases drastically under chilling temperature.
  • Green squash is sensitive to chilling injury at storage below 41°F (5°C). Symptoms include surface pitting, increase rate of decay, and increase rate of water loss. Sometimes symptoms may not be apparent until return to a higher temperature.
