  • Fresh corn is yellow kernels wrapped with bright green husk. Yellow corn is the predominant variety but there are also white and bicolor corns. Fresh corn is sweet with a soft, buttery flavor. Common application includes roasted and baked. Fresh corn is available year-round.
Handling Tip
Selection
  • The fresh corn husk is bright green and wraps tightly against the corn.
  • Check the tassels on top of the fresh corn. They should be brown, moist, and some sticky to the touch. Decay usually starts at the tassels.
  • Avoid husk that is dry and yellow and avoid tassels that are black and dry.
Storage
  • Fresh corn should be stored at 32°F (0°C) with a relative humidity of eighty-five to ninety percent.
  • The typical shelf life is less than two weeks.
  • Sugar content decreases rapidly during storage. At 50°F (10°C), the loss of sugar is about four times more rapid than at 32°F (0°C). At 86°F (30°C), sixty percent of the sugar can be converted to starch in a single day compared to six percent at 32°F (0°C).
  • Fresh corn is sensitive to odor. Do not store fresh corn with any strong aroma products; especially scallion.
  • Fresh corn is sensitive to ethylene, a naturally occurring gas that regulates ripening, over prolonged storage. Fresh corn should not be stored with high ethylene-producing products to extend shelf life and avoid husk yellowing. Fresh corn produces a very low level of ethylene.
  • Fresh corn is not sensitive to chilling injury and should be stored as cold as possible without freezing.
