  • Baby Spinach is spinach harvested at an earlier stage of development. The smaller leaves are more tender and have a sweeter flavor than mature spinach. It is a popular salad green that can be easily found in the market. Baby spinach is available year-round.

Selection
  • Baby spinach has a uniform green color with no signs of yellowing, sliminess, or decay.
  • No foul odor.
Storage
  • Baby spinach should be stored at 32°F - 36°F (0°C - 2°C) with a relative humidity of ninety-five to a hundred percent and with light mist for loose packaging.
  • The typical shelf life is ten to fourteen days. High humidity is important to avoid wilting. High temperature promotes deterioration and leaf breakdown.
  • Baby spinach is highly sensitive to ethylene, a naturally occurring gas that regulates ripening. Baby spinach should not be stored with high ethylene-producing products to extend shelf life and avoid russet spotting and leaf yellowing. Baby spinach produces a very low level of ethylene.
  • Baby spinach is not sensitive to chilling injury but is susceptible to freezing injury. The freezing point for baby spinach is 31°F (-0.5°C) should be avoided. Freezing injury symptoms include yellowing, dried out, and translucent leaves.
