  • The green leaf has an elongated shape that is narrow and small at the base fanning out to a wide, curly, loose top. The green leaf is smaller and less elongated than the romaine lettuce. It is crisp sweet and semi-bitter. Mature leaves may taste more bitter than less mature leaves. The green leaf is best suited for sandwiches and salads. The green leaf is available year-round.

Selection
  • Green leaf with bright to medium green leaves with no signs of bruises or browning.
  • Leaves are wavy, crisp, and not wilted.
  • Stems are clean without brown spots or cracked ribs.
Storage
  • The green leaf should be stored as close to 32°F (0°C) as possible with a relative humidity of ninety-eight to a hundred percent and light mist.
  • The typical shelf life is up to four weeks.  High humidity is important to avoid wilting. High temperatures promote rapid deterioration.
  • Green leaf lettuce is sensitive to ethylene, a naturally occurring gas that regulates ripening. The green leaf should not be stored with high ethylene-producing products to extend shelf life and avoid russet spotting and leaf yellowing. Green leaf lettuce produces a low level of ethylene.
  • The green leaf is not sensitive to chilling injury but is easily damaged by freezing. The freezing point for green leaf is 31.6°F (-0.2°C) must be avoided. Freezing injury symptoms include dried and translucent leaves.
