  • Asparagus is a green vegetable that is easily recognizable for its long, pointy spears. Asparagus is typically eight to ten inches in length, Spears with green butts are preferred over the spears with white butts, as white butts are associated with increased toughness. Asparagus has an earthy flavor, similar to broccoli and almost like an intensely flavored green bean. The texture is tender and crunchy. Asparagus is commonly grilled, steamed, or roasted. Asparagus is available year-round.

Selection
  • Asparagus spears should be green and firm with tightly closed and compact tips.
  • Spears are straight, tender, and glossy in appearance.
  • A small amount of white tissue at the butt will delay decay development under typical commercial distribution.
  • Asparagus diameter does not represent quality. Larger diameter asparagus is just as tender as slender spears. Our customers generally prefer the larger diameter over the slender spears. 
  • No signs of shriveling.
Storage
  • Asparagus should be stored at 32°F - 36°F (0°C - 2°C) with a relative humidity of ninety-five to ninety-nine percent and lightly mist.
  • The typical shelf life is two to three weeks. High humidity is important to avoid dried-up butt ends.
  • Asparagus produces a low level of ethylene, a naturally occurring gas that regulates ripening. Ethylene production increases with time after harvest. Exposure to ethylene accelerates the toughening of the asparagus.
  • Asparagus is sensitive to chilling injury after about ten days of storage at 32°F (0°C). Symptoms include loss of sheen and graying tips. A wilted appearance may be observed. Stored asparagus at 35°F to avoid low-temperature chilling injury.
