  • Lettuce cello is head lettuce, meaning it grows in a ball rather than in leafy form. It is known for its comparatively small, densely packed heads. The outer leaves are bright green in color, while the inner leaves and hearts are light green to yellow and sometimes even white. The lettuce is crunchy and juicy with a mild, sweet flavor. Suitable for salads and sandwiches. Lettuce is available year-round.
Handling Tip
Selection
  • Cello lettuce is bright light green, clean, and free of browning.
  • The leaves are moist and not wilted.
  • The head is compact and firm.
Storage
  • Cello lettuce should be stored as close to 32°F (0°C) as possible with a relative humidity of ninety-eight to a hundred percent and light mist.
  • The typical shelf life is up to four weeks. High temperatures promote rapid deterioration.
  • Cello lettuce is sensitive to ethylene, a naturally occurring gas that regulates ripening. Cello lettuce should not be stored with high ethylene-producing products to extend shelf life and avoid russet spotting and leaf yellowing. Cello lettuce produces a low level of ethylene.
  • Cello lettuce is not sensitive to chilling injury but is easily damaged by freezing. The freezing point for cello lettuce is 31.6°F (-0.2°C) must be avoided. Freezing injury symptoms include dried and translucent outer leaves.
