  • Green Tomatillo aka "Husk Tomato", "Qing-Fan-Qie", "青蕃茄"
  • Green tomatillo looks like a green, unripe tomato with a dry, leafy husk that wraps around the outside. It is sour and sweet, like a green apple, with bright citrusy notes and a dense, dry texture. Unlike regular tomatoes, tomatillos remain firm even when ripe. It is a popular ingredient for Mexican sauces and soups. Green tomatillo is available year-round.

Selection
  • The bright green husk should tightly cover the whole tomatillo.
  • The husk is moist with no signs of shriveling or mold.
  • Green tomatillo is firm and unblemished.
Storage
  • Green tomatillo should be stored at 41°F - 50°F (5°C - 10°C) with a relative humidity of eighty to ninety percent and no mist.
  • The typical shelf life is three to four weeks. Green tomatillo can also be stored at ambient temperatures. Under ambient temperature, the husk will dry but the fruit will remain in good condition for about a week.
  • Mature green tomatillo is sensitive to ethylene, a naturally occurring gas that regulates ripening. Mature green tomatillos should not be stored with high ethylene-producing products to avoid undesirable color changes. Immature green tomatillo produces a low level of ethylene. Ethylene production increases as the fruit mature.
  • Green tomatillo is sensitive to chilling injury after three weeks of storage at 41°F (5°C) and after four weeks of storage at 50°F (10°C). Symptoms include surface pitting, discoloration, and decay. Symptoms appear faster at lower storage temperatures.
