  • Scallion aka "Green Onion", "Spring Onion", "Qing-Cong", "青葱", "青蔥"
  • Scallion has long, hollow green stalks and small white bulbs. The bulbs resemble the flavor of a white onion though milder. The green part is distinctively oniony but with an additional fresh, grassy flavor. Scallion is often used as a garnish or a spice up during the end of the cooking. Some popular application includes scallion pancake and scallion oil. Scallion is available year-round.

Selection
  • Upright scallion with pearl white bulbs and bright green stalks.
  • Undamaged stalks, unwilted tops, and no sliminess.
Storage
  • Scallion should be stored at 32°F (0°C) with a relative humidity of ninety-five to ninety-eight percent and light mist. 
  • The typical shelf life is two to three weeks. Higher temperatures decrease shelf life and increase leaf yellowing.
  • Scallion is an odor producer and should not be stored with odor-sensitive products. Especially, fig, grape, mushroom, and corn.
  • Scallion has a low level of sensitivity to ethylene, a naturally occurring gas that regulates ripening. High concentrations of ethylene will encourage sprouting in the scallion. Scallion produces a very low level of ethylene.
  • Scallion is not sensitive to chilling injury and can be stored at 27°F - 28°F (-3°C to -2°C). Storage below 25°F (-4°C) may cause freezing injury.
