  • Bok Choy Heart aka "Bok Choy Sum", "Bai-Cai-Xin", "白菜心"
  • Bok choy heart has small yellow flowers that bloom on long fleshy white or green stalks topped with dark green oval-shaped leaves. It looks similar to broccoli raab but with a milder and sweeter flavor. Bok choy heart is usually stir-fry or blanch.

Selection
  • Bok choy heart has a uniform green color with no signs of yellowing or wilting.
Storage
  • Bok choy heart should be stored at 34°F - 36°F (1°C - 2°C) with a relative humidity of ninety-five to a hundred percent.
  • The typical shelf life is two to three weeks.
  • Bok choy heart is sensitive to ethylene, a naturally occurring gas that regulates ripening. Bok choy heart should not be stored with high ethylene-producing products to extend shelf life and avoid yellowing. Bok choy heart produces a low level of ethylene.
  • Bok choy heart is not sensitive to chilling injury and should be stored as cold as possible without freezing.
