- Red leaf lettuce is a leafy vegetable that resembles romaine lettuce except in its tips, which have a burgundy red tinge. The curly leaves are loosely bunched with a crisp texture. Red leaf lettuce has an earthy, mildly sweet taste with subtle notes of hazelnut that is tender and refreshing. Mature leaves may have a more semi-bitter flavor compared to less mature leaves. - Leaves are wavy, crisp, and not wilted.
- Stems are clean without brown spots or cracked ribs.
Storage
- The red leaf should be stored as close to 32°F (0°C) as possible with a relative humidity of ninety-eight to a hundred percent and light mist.
- The typical shelf life is up to four weeks. High humidity is important to avoid wilting. High temperatures promote rapid deterioration.
- Red leaf lettuce is sensitive to ethylene, a naturally occurring gas that regulates ripening. The red leaf should not be stored with high ethylene-producing products to extend shelf life and avoid russet spotting and leaf yellowing. Red leaf lettuce produces a low level of ethylene.
- The red leaf is not sensitive to chilling injury but is easily damaged by freezing. The freezing point for red leaf is 31.6°F (-0,2°C) must be avoided. Freezing injury symptoms include dried and translucent leaves.
