  • Lime is a citrus fruit, which is typically round and green in color. Limes have a tart, distinct zesty sour flavor. Lime is often used to make drinks and adds a refreshing taste to sauce and dishes. Lime is available year-round.

Selection
  • Lime is firm with a uniform green smooth skin.
  • Lime is free of decay, blemishes, and splits.
  • Lightly scratch the skin for a pleasant citrus fragrance.
Storage
  • Lime should be stored at 50°F (10°C) with a relative humidity of eighty-five to ninety-five percent and with no mist.
  • The typical shelf life is up to eight weeks. High humidity is important to avoid shriveling and loss of juice.
  • Lime produces a strong odor. Do not store lime with odor-sensitive products.
  • Lime cartons should be kept off the floor to prevent them from becoming wet from condensation. Lime should be stored away from direct sunlight.
  • Lime is sensitive to ethylene, a naturally occurring gas that regulates ripening. Lime should not be stored with high ethylene-producing products to extend shelf life. Lime produces a very low level of ethylene.
  • Lime is sensitive to chilling injury under prolonged storage of below 50°F (10°C). Though three to four weeks of storage at 37°F - 41°F (3°C - 5°C) is usually tolerated without harm. Symptoms of chilling injury include skin pitting, interior discoloration, red blotch, and loss of juice.
