  • Large Mexican cucumber has thick dark green skin; seeds are more distinct and are often removed before use. Large Mexican cucumber also has a refreshingly mild flavor but is less crunchy than other varieties. Common application includes salad and sandwich. Large Mexican cucumber is available year-round.

  • A uniform dark green color skin with no signs of yellowing.
Storage
  • Large Mexican cucumber should be stored at 50ºF - 54ºF (10ºC - 12.5ºC) with a relative humidity of ninety-five percent and periodic mist.
  • The typical shelf life is less than fourteen days. High humidity is important to avoid shriveling.
  • Large Mexican cucumber is very sensitive to ethylene, a naturally occurring gas that regulates ripening. Large Mexican cucumbers should not be stored with high ethylene-producing products to extend shelf life and avoid yellowing and decay. Large Mexican cucumber produces a low level of ethylene.
  • Large Mexican cucumber is sensitive to chilling injury after two or three days of storage at below 50ºF (10ºC). Symptoms include yellowing, softening, and pitting. Development of chilling injury symptoms can be avoided if used immediately after removal from storage.
