The heirloom greasy bean comes into season in late May to early Fall. It is a light green heirloom snap bean with a slick pod and no fuzz. The bean pods are long, straight, bright green, and bumpy. When you cook them, the pod turns shiny, which is why they're called greasy beans. Greasy beans have a tender, slightly chewy texture, and taste of superior nutty, mellow, umami flavor. One popular application is stir-fry heirloom greasy bean with ham hock or bacon.
